Salmon with Prosciutto and Apple

Instructions

  1. From bottom to top, layer the ham, apple, sage, and salmon (flesh-side down) on parchment paper. Season to taste, then fold the edges of the paper to enclose the fish. Bake the fish at 350° for 8-10 minutes.
  2. Combine the ginger, shallots, vinegar, mustard, and honey in a blender. While blending, drizzle in the oil to form an emulsion. Season to taste.
  3. Plate the salmon, dress with the vinaigrette, and serve.
