Salmon with Prosciutto and Apple
serves 4
Ingredients
- 4 ea 7-oz salmon fillets
- 1 ea apple, peeled, sliced thin (coat with fresh lemon juice)
- 4 sl Prosciutto ham, sliced thin
- 4 ea sage leaves
- 1 T ginger, minced
- 2 T shallots, chopped
- 2 T rice vinegar
- 1 T stone ground mustard
- 2 T honey
- 1/2 C olive oil
Instructions
- From bottom to top, layer the ham, apple, sage, and salmon (flesh-side down) on parchment paper. Season to taste, then fold the edges of the paper to enclose the fish. Bake the fish at 350° for 8-10 minutes.
- Combine the ginger, shallots, vinegar, mustard, and honey in a blender. While blending, drizzle in the oil to form an emulsion. Season to taste.
- Plate the salmon, dress with the vinaigrette, and serve.
